Every year the week after New Years turkeys and hams go on sale. This year I got 2 18 pound turkeys for 10 bucks. Smoking one today and making tamales with the leftovers tomorrow.

Added some potatoes, tomatillos, Anaheim chilis, pasilla chilis, jalapeños, and an onion. The onion chilis and tomatillos will be the salsa for tamales. Turkey came out really good. I also threw 2 eggs in the smoker because I've been wanting to try smoked eggs and they did not disappoint. I should have put a whole carton in there. I'll post pics of the tamales tomorrow. My wife and I have been making smoked turkey tamales for about 5 years now and they are by far my favorite tamales.

Wow that looks great and sounds like some amazing tamales!!!

So here comes my onslaught of questions hahaha
  1. What temp did you smoke the turkey at?
  2. How long did the whole cook take?
  3. What wood did you use to smoke with and how long did you apply the smoke?
I can't wait to see the finished turkey tamales I'ver never had any and it seems like all of the ingredients for yours are top notch being smoked and looking so good!

My mother uses my grandmother's recipe (from my father's side) to make the best pork tamales in the world!

I know everyone says "my mother/grandmother/etc. makes the best tamales" but I have found that when I try all of these "best" tamales they have been severely lacking when compared to the ones my mother is making (and my grandmother used to make).

I'm working on getting her to write down a recipe so I can make some some day.  If I ever get around to making them I'll be sure to post the recipe here.

I have an aunt that is using the same recipe but she makes small tamales where my mother makes giant ones hahaha.  However, my aunt makes the BEST bean, cheese, and pepper tamales I have ever had... wow they are amazing!

I'm excited to see the tamales be posted and I can't wait to receive the ones you promised me in the mail hahahaha

I do chickens and turkey at 275-300 so the skin will be crispy. Took just under 4 hours. I used peach wood this time I usually use cherry for turkey. I like the peach though it's very mild but good flavor. I've never heard of bean and cheese tamales. I'll have to try that. Actually ended up making the tamales today they are steaming right now. I'll post pics as soon as they're done.

 Man those look great!  Your meal is much better than my little salad I'm about to have for lunch.  I am going to crumble a smoked pork frank on my salad for the meat portion though :D
