you could  depends on how clean your fire is and  how smokey you like them. also how the bark is forming if you want after the 3 hours  see how they look. most times i never cook beef plate ribs wrapped.

just depends on how you think they are going..  but those looks really nice  are they chuck or pate  ribs ?
 
Not sure. Picked them up at Costco for a great price cyro wrapped. First time ever smoking beef ribs. Thought I would change it up. Pork ribs butt and beef brisket is getting too easy. Lol
I normally braise beef ribs like a good Korean boy I am. Lmao.

I never wrap beef ribs. The bend test lets me know if they are done same as pork ribs. Make sure you take the membrane off the back it can be really stubborn on beef plate ribs.

If you've never had beef ribs before you are in for a treat!
 
I never wrap the beef ribs either. I usually pull the membrane and then smoke them on the hottest part of my smoker (top shelf toward the firebox). I have found rub wise what works really good is either salt and pepper or a steak seasoning. i like Montreal or Chicago. Put on some steak seasoning and use a little oil or Worcestershire sauce to make it stick leave over night. cook like 3-5 hours depending on how hot you want to go and i can usually tell when its done by seeing a good 1/2 inch of bone. Once their done let them rest 30-45 minutes and you have steak on a stick.

Here is the seasoning i have use a couple times and it tastes great!


Here is couple small racks i did and this is them cooling...look for about that kind of pull back from the bone.
