A lot of fat is typically trimmed from a brisket prior to smoking it.  What can be done with this "waste"?  Maybe put it in a shallow pan and cook it along with the brisket or put it in a perforated container and collect the drippings.  And then, what could be done with the end product?  Something to flavor other foods?  Or just toss it?  I'm open to ideas.

I typically just toss the fat trimmings.. But if I don't get my butcher to square up my brisket and I do it myself then I typically save that to grind up with venison to make a mean burger..
 
I usually toss the hard fat and use the soft fat in my beans. If you save drippings you could alway brush it on steak as it comes off. Pretty tasty [emoji]128523[/emoji]
