What is the reason to season the meat and let it sit for 24 hours prior to putting it into the jerk cannon?

Could you not season it and shoot it right away and let it sit over night in the fridge and then cook it the next day?

Either way will work, your just giving the spices time to penetrate the meat before smoking it.

That is exactly why I was asking.

Very cold stiff meat would be much harder to use than freshly mixed.

But knowing me, ill try both ways to see the better result in either efficiency or texture/taste.
