Well, new to SMF as a member. I'd first like to thank you all for allowing me in and to thank the admin's for running what I have seen as a very useful way to trade and collect information. I have been reading some posts at times when I need to look up and answer to a question or concern I encounter. I have been smoking for twenty years but I make no claim to be an expert. My favorite meat to smoke is pork ribs and Boston Butt for pulled pork, second is beef brisket and third is chicken. Fourth is all the rest. Fish, turkey, venison, you name it, I will smoke it or cremate it trying. My woods depend on the meat but I use a lot of fruit woods and pecan, hickory and oak. I'm not a big fan of mesquite but I will use it if people I am cooking for want it specifically. Again, thank you all for adding me.
