Smoked two racks of ribs on Saturday in my COS. I trimmed the racks perfectly St Louis style. Managed the fire for about two hours too long. Should've pulled them when the bark looked good and wrapped them in foil and into the oven. I thought I was going low and slow, but I did start drinking beer early, as the in laws were in town, and I had an excuse to sit in the shade and sip the nectar. I turned two beautiful racks into pork jerky. Oh well. Next time, I'll kill it. Got a little carried away.
