Has anyone had experience with this company? There only a 4 hour drive from me and by the looks of it, they appear to be very high quality. Seem similar to a Lang
 
They look nice if a bit pricey. I'm curious how Cajun Cookers is in MN? I guess the people are from LA?

as far as the price if you can save on shipping i bet you will come out even as far as ordering a Lang or one of Texas fabricators. if its in your budget and you can drive there easily think that lil cajun model is a nice smoker!

Thanks for the reply! Shipping is the killer for me on those other brands, that's the main thing that makes those Cajun smokers a bit more appealing.
 
They look nice to me, lot closer for me to pick 1 up also..... I like the reverse flow a lot, hard to beat a Lang, but GA is a haul for me...
 
I was looking at the stock lil cajun model that was on their website. I was one that comes up on the lil cajun tab.

Looks like a good smoker...   I like the option of tuning plates or slide them to make a reverse flow...    "double welded" seams are cool....   I do like that some are built to NSF standards...    It has a drain, which is good...   Insulated Fire Box...  

Now you have to pick.... 
 
I messaged their Facebook page to ask how their tuning plates worked. Since they only have one exhaust I am interested in how they produce heat on the side opposite the firebox if the plate breaks seal on the firebox side and forces the draft up. I would love to see their set up. They have not responded to my message though.
 
The adjustable plates....   you can direct heat to the exhaust stack end and not heat the entire smoker..   That's what I got from reading their descriptions...   Great concept...   I like it.....
 
I can do that with my Hybrid Dave. They claim their tuning plate system makes there cooker more versatile but I do not see that because they are only utilizing one exhaust. In order to get the most out of tuning plates they would need a set up like my Hybrid with two exhausts with one opposite the exhaust and one on the firebox end.
They have not responded to my question as of yet.

Ok here is how it works and why we use this system... the fire box is located on let's say right side heat enters cook chamber under plates. Chimney is located on same side as box so it sucks the heat back across the cook racks and out chimney. Now on a standard reverse flow that would be the end of it and your temp will be 60 to 80 degrees hotter at the left side of the cook chamber. With our system you can move the plates slightly to allow heat to rise up in any location evening the heat in the cook chamber up to 3 degrees. Our system also allows for water pans to be placed on the tuning plates to smoke and steam the cook chamber. Our system also allows you to remove the plates and add our grill retro kit and bbq grill with the smoker. Our double welded inner cook chamber and auto locking door make clean up a breeze.
In my opinion if you gap too much on the firebox end you will render the opposite side useless for cooking but that's just me.
I would prefer a Hybrid like mine with two exhausts or straight tuning plates.
 
Sounds pretty gimicky to me. And what do they mean by double welded? Did they weld each side of every seam? That's just bad welding practice if that's what it's supposed to mean. I've never heard that phrase before. In a properly designed smoker the heat will be pretty close on either end.

I'm impressed with the double welding...  eliminates the gaps on both sides of the metal where gunk can collect and bacteria can grow... easier to clean...  

And I do understand their tuning plates and one stack concept...  pretty cool and makes the smoker more versatile, IMNSHO....

If the fire box on their smokers had an upper air inlet
 
Not totally sure you need tuning plates on a reverse flow, the Langs I've  seen just had a floor below the grates, open on far end to flow back across... I'd really  like to see 1 up close..
 
I emailed them the other day to send me some close up pictures of all the fine details like that before I drove up there. When I get them I'll post it on here.
