Hello all! I live in Dunedin Fl, grew up in South Tampa. I found this forum after my Wife threw out my old bullet style smoker and got me a Smoke Canyon Vertical Smoker with Offset Firebox. I was doing some research on it for issues/likes/dislikes and stumbled here. I fared OK with those bullet smokers but this is a whole new ballgame and I'm very very limited on knowledge when it comes to smoking. Fortunately for you nice folks, I'm very familiar with Forums and I am usually able to find answers I'm looking for via search feature LOL. I am here to learn and will most likely be a lurker in the beginning until I start to get my feet wet with the new smoker. I have read others referring to heat issues, leaks etc with some of the Smoke Canyon Smokers. I haven't put it together yet but I did get to see the display model and it seemed to have tighter tolerances than what I read others describe such as the door sealing. We'll see I guess. I've read some hacks/mods that seem pretty valid and I'll address them as needed. I just enjoy relaxing with a nice beer while the food cooks and be social with friends. Maybe this new Smoker will have me cooking more and not just a once and a while novice. See ya around the board hopefully. Kenny

I was looking for your old smoker so I could get some parts off it. Musta been picked up before I got their.

We go to Dunedin alot, btw, you have a real fine butcher shop at us 19 and Curlew road, behind home depot .... welcome to smf 
 
They have the vacuum tanks in the store where they marinate  by vacuum overnight ...

it's a pretty good process ...
