Got a 15 pounder going today for the ATL kids.
Just plain old SnP rub
When the brisket shrinks down some i can re position the temp probe.
This was just about 45 mins before i pulled from kettle.
Wrapped in clear wrap and put in igloo for 2 hours.
Ready for slicing. This is going to my daughter in ATL.
No fancy rubs, sauces or mops. Just plain salt and pepper.
Yeah it is. Works great in the kettle. i got the one that has the water panel in it.
I like the one I made no water pan,they do a great job with little charcoal
