I'm fairly new to smoking and I have a question. I have two events on two different days coming up. On Saturday I was going to smoke some ribs and wings. The wings are for Sunday. Can I take them out of the smoker on Saturday and put them in the fridge overnight, and then deep fry them Sunday to crisp the skin and warm them back up? Or should I smoke and fry the wings Sunday? 
 
I had the same situation. I smoked them on a Monday to 140 and on Tuesday I put them skin down on a 400 degree grill. Brought them up to temp with crispy skin. Hope this helps.
 
I think you will have better results deep frying just before you eat them, would probably be soggy if you fried then fridged them.
