So I've been only smoking for a couple weeks now. I've done st Louis style ribs. I did the 3-2-1 for those. And they turned out awesome. I'm going to do some pork back ribs tomorrow. I've seen some people say do a 2-2-1 for back ribs. Just wondering which I should do. Also I'm doing 4 racks in my MSE 30. Would I rotate the ribs on the racks or just set and forget

3-2-1 works for me on backs...sometimes less, sometimes more..just depends on the meat and other factors

You may want to check out the "Chime in..." thread started by Jokensmoken about ribs. It may give you some ideas. I like Smokin Al's cook to temp method and it's touched on in that thread. Good luck!
