Morning all.  So here's the thing.  I'm going to be smoking 6 racks of side ribs (spares not BB) this Sat. on a Primo XL.  I'm thinking 225°.  With 6 racks I don't want to mess around with the foil (that I always do).  Having never done unwrapped ribs I did a Google and found everything from 3 hr @225° to 5 hr @275°.  Any thoughts or advise would be great.  If I'm doing the bend test, when would you think that might happen?    Thank you.

I would try them at 250/275 for 4 hours, see where you are at, then either pull them or keep them on for another couple. My guess is probably 6 hours though.

Thought about doing a trial run with a rack or two? That would give you the definitive answer to what you are looking for.
 
I would think at 225 you will be looking at that 5 - 6 hour cook time. Use the probe test to determine if and when they are done. Or, do you have a digital instant read thermometer? If so, you should be looking at a temp in the area of 195 - 205, depending how you like the ribs....bite off or fall off.
 
Thanks gents.  I usually do a 3-1-45 in the foil, but I usually have shinners showing through the top.  I'm hoping to avoid that with the no foil route.
