So...I have a little issue. Ribs are trimmed and rubbed, and then I was informed I had to be somewhere for an hour right in the middle of the cook. I was thinking about smoking the first 3 hours, then wrapping and throwing in the oven for two hours during the stretch I am gone, and then returning to glaze and finish on the smoker. I am very Leary about what could happen Temp wise were I to just leave them go on the smoker while I was gone. Any reason that plan wouldn't work?

well  once you wrap  them the smoker is basically just an oven at that point  no more smoke is getting on the rib. you're  just heating them till done so shouldn't be an issue

Yes, when they get wrapped, your smoker is just an oven. Many times I have finished ribs like that in the oven due to time or weather issues. As long as they are smoked for a few good hours, no problem!
