Looks good but three legs? I would think they should sell them in sets!:biggrin:
 
Those look great and I bet they taste great too, but I think they normally cure the ones they smoke at fairs to give them that ham like taste.

I have used pop's brine to do it myself and it was slightly on the sweet side for me but came out pretty good
 
Those would be good in some bean soup.
Navy beans
Onion
Celery
Carrot
Chicken stock
Bay leaf
Salt/pepper
Viking jumbo drumsticks

From my own experience smoking turkey legs if you smoke them low and slow around 225 to 250 the skin will turn out like boot leather.

If you want great smoked turkey legs smoke them at no less than 350 and closer to 400 for edible crisp skin.

Just my opinion and worth exactly what you paid for it.
