One side is 191 the other 185degrees. Do i go to 200 on the cooler side? Maybe im probing in the wrong area? Thanks for any help guys
 
Wait till the average is like 202 or so ... you waited this long ... keep it going ... you will like the result ... show us a pic when its all done

I swear by an average temp of 203.. To me that seams to be the magic number.. It can seem like an eternity to wait for temps to go from the 185-190 range (like you describe) to get to the 203 mark.. But trust me the wait is worth it..

I know what you mean! We all fret about the stall, but that last 5 degrees seems to take FOREVER!!!
 
PULL IT, WRAP IT IN FOIL, WRAP IT IN A HEAVY TOWEL,  LET IT REST FOR 20 - 30 MINUTES, GET THE BUNS AND COLE SLAW OUT, THEN SHOW US SOME QVIEW ....

Had to stick the probe in there because that end fell off in my hands. I think it looks better all together. Resting like a baby now. Its the 4th or 5th butt ive done now and im pretty happy with the results. Ribs came out fantastic as well. Too bad my wife and kids ravaged them before i could get a pic.
 
Still only 1 year into smoking, and I agree about that final home stretch of IT (about 5-10 degrees). I can handle the stall, the last bit drives me bonkers.
 
Awesome. My 6 year old daughter had the first taste and then fell on the floor proclaiming how good it was. Absolutely the best compliment, because she is so picky that her food cannot touch eachother on her plate. Made my day. Neighbors enjoyed it also. Thanks guys.oh yeah; the love of my life,mother of my children "forgot" to make slaw....i will let her back in tomorrow night.
