Hello from MN, I'm kinda new to the smokin thing. I thought if I was going to learn how to smoke, I figured I might as well do it the old fashioned way.

I built that's in my profile picture and it works fairly well. Just have a few questions about getting meat up to temp. My smoker get up as high as 225f if I push it. Is it better to do low and slow and finish in the oven or just wait it out? Question 2: is their any benefit to using charcoal and wood of just one or the other? Thanks!
