I'm not fully satisfied... I will post a pick after they rest but they seem to be more fall off instead of pull off.... I had issues with the internal temp. Part of the rack was cooked at 195 while the other (thicker) part said it was at 175... so I kept them on longer until the thicker part read 195. Any suggestions? 

Total cook time was around 4 hours with smoke temp hovering around 230-240. 
 
2-2-1 method at 225 degrees. If those are to "fall off" for you add 1/2 hour to the first 2, and take a half hour off the second 2.

I had fall apart baby backs after 2/2/1 at 225-250 on my ECB. I kinda like them more on the bone really.. I'm gonna try again but 2/1/1 lol. They almost broke in half as I took them off the grill with tongs..
 
Turns out... they were more pull off than I thought.. I did one rack with glazed and foil and the other one straight on the rack... I am pleased with my first go around.  Very pleased with the UDS. I started the smoker at 11:00 AM (did ribs for 4 hours) Raised the temp to smoke a Turkey for 2 1/2-3 hrs.... I can't take the coals home, so we are lowering the temp down to try some fish and thin pork loins.... It is 8:00 PM and still have a lot of fuel left. 
 
That looks like a perfectly done rib to me!
