Howdy,

      I have been lurking in the forums for a few weeks, and keep seeing people being yelled at (In jest) to hit Roll Call up and introduce themselves. Figure it was time for me to come out of the shadows and say hello and give some insight as to who I am!

      I love to grill and cook. For the last 15 years I have been doing all the cooking and trying to cook dishes from all over the world. I am the guy that's in a foot of snow breaking out the grill on my deck and grilling in the middle of winter! (Yes, my wife thinks I am nuts, however I think this is perfectly normal and acceptable!) I just recently got myself a new grill and 2 smokers.

     My new Grill is a 3 Embers 4 Burner Radiant Grill

     My Smoker is a Masterbuilt 30" Propane (Wood Chip)

     My Other Smoker is a Traeger Junior Elite (Pellet)

     I just Ordered an iGrill2 with 3 probes, and the 4th probe for ambient temp.

     I am NEW to smoking (I have only smoked 2 racks of ribs (One Pellet and 1 Chip) and smoked a chicken in the Traeger.  I am trying learn to smoke things (which is how I found this forum) My first rack of ribs (on the Masterbuilt) were really tough, and my 2nd rack (on the Traeger) were much better and moist, but not fall off the bone.

     Also, my wife just had a heart attack, so I am have gotten a lot of insight about low/no salt rubs, and ways to get away from salt brines.

     As for me, I am a Web Developer, and Home Automation designer/programmer/installer.  (Google/Samsung Developer).
 
Welcome to SMF, Robsch!  Glad you are here and using the gear year round.  Kind of fits a lot of us.  Hopefully your wife is on the mend and enjoying your low/no salt BBQ offerings.

Hello PA neighbor!

Very sorry to hear about your wife, and my best wishes to you both in her recovery.  Welcome to SMF, I'm new here too, and the advice is invaluable for us just venturing into smoking.  I just started on my camp chef in the past month, and have had nothing but great results from my pellet grill thus far, but like you, I cooked on charcoal for many years, and love to try lots of foreign dishes as well.  I'd gamble with all of your cooking years experience so far, you'll pick it up rather quickly on the new gear.  Happy smoking!

Best rubs (low salt) are the ones you make yourself. I try to keep salt intake low and premade rubs tend to be heavy on the salt.

We too go easy on the salt.

Plenty of recipes out there that are either low or no salt.

I have started plans (Its a late fall project) to build my out door kitchen. I am going to frame out my grill and my Traeger and remove the legs and drop them into a cabinet that I make. I will tile the top of it stone, or stamped & polished concrete. The Masterbuilt is a vertical smoker, so its going to be on the other side, and built in where I put the sink, drawers, refrigerator (one of the little mini ones). Just need to finalize the layout and hopefully get a stretch of non rainy weather, or non humid weather.

As for the wife, its now been 5 weeks post HA, and she is recovering well.. just dealing with the evil that is insurance and getting cardio therapy going.

I plan on smoking some Alaskan Cod, and another chicken this week.

The 28th is our wedding anniversary, so I was going to have a few friends over and do a small luau. (A few racks of smoked ribs, a rotisserie chicken, and some huli-huli Chicken)
