I am smoking 2 top sirloin . from what I read them temp should be about 225 and cook for 45 min per lb. for medium rare or 1 hour per lb. for   for  well done. . Does this sound correct ? And any suggestions about seasoning or brining .Also do I just want to use hickory ? I am using a masterbuilt electric smoker

It's best to cook to an internal temp. 125-130 for Med-rare. 145-150 for well. Then rest for 30-45 minutes before slicing.

Are these roasts or steaks?
 
they are roasts . and I always do cook to internal temp . sorry I guess I missed putting that temp in my post. I am just trying to get an idea on time .and from all I am reading just S,P,O,G. for seasoning .
