I just wanted to say thanks to all who have posted advice on this forum. I smoked my first brisket in my Dyna Glo Monday and it turned out PERFECT, thanks to the advise I read on the forum. I started with a packer trim that weighed in at about 12. I took advise from a brother in law that I've never seen anywhere. Bend the cryo-vac brisket at the store. If you can make the ends touch, it'll be tender.
Due to the Dyna Glo being too small for the whole brisket, I cut it about in half and rubbed it about an hour and a half before I started it.
Fired the smoker up, and put the halves on once I reached a constant 250. Checked the temp on the thinner half at 4 hours, and it was sitting about 165, so I pulled it and wrapped it, then put it back on. 2 hours later I checked it and it was about 200, so into the cooler it went. 2 hours later the thicker half was around 165, so it got wrapped. Both halves turned out AMAZING. Tender and smoky, but not overly smoky. The wood was all hickory. Thanks again!
