Happy 4th everyone!
Smoked a 8.5 lb pork butt for today's family get together. Used one chunk hickory and several apple chunks. Seasoned the meat yesterday morning and let it rest until dinner time.
Fired up WSM at dinner and put pork on around 6:30 pm. Smoker ran around 250 and needed a charcoal refill about 11:30 (I have the 14.5 inch model...just seem to run out of charcoal/heat on long runs). Woke up at 3am to check and was getting close to desired IT of 200. After some semi-rest, I took the pork off around 4:40 am. Bone slid right out. Kept it warm, got some sleep, and later this morning pulled it.
My wife made some broccoli salad and we're heading out this afternoon for the family get-together. I need to get a nice remote probe for a better nights sleep. My wife and I were already picking at the meat.[emoji]128512[/emoji]
