Need urgent help. Put on a brisket last night at 12:30. Checked at 4:30 and internal temp was at 155. Figured I would sleep for an hour. Woke up at 6;00 and internal temp had dropped to 130 and outside temp in the smoke was at 80. Started back up...but took 2 hours for the internal temp to start climbing back up. Never did foil it. Am I safe to bring her back up to 210 to eat? Or better to toss and chalk it up to a learning lesson on never turning your back on rack?

More concerned since I am serving to family and friends.

Heat it up in the oven if you like...  It should have enough smoke...    and it will be safe to eat as it got to 155 IT....

Thanks Dave and Al. So because it got up to 155 and > initially, it should be safe?...or is it that I am bringing it back up to 210 that makes it okay? Or is it both?
