I have a bullet style electric smoker.  Going to do some spare ribs today.  My question is I usually put apple juice in the bowl that sits on top of wood chips.  Out of curiosity are there other liquids I could use?

Back when I used my gas grill to make spare ribs, I tried lots of liquids; apple juice, apple cider, beef, water, beef and chicken broth.  No one could tell the difference.

Because the water in the juice, cider, beer, etc, expands 1600-1700 times when it evaporates, the flavors in the liquid are so dispersed at that point they can't impart any true flavor.  Save the juice and just use water.
