Hi all,

I have been using a Pitmaster IQ 120 with my Assassin 24 as it came with it. But it seems when I am running on low temp (150 degrees, which is the minimum) it is not getting enough oxygen and the smoke gives a bad taste to the meat(like a stingy charcoal taste). I am running this low when pre-cooking sausages as I do not want the fat to render out.

Have any of you experienced this or is it something else which is wrong? Maybe using another lump charcoal?

I would try using lump for sure, but try to burn less at any one time.  You want just a small amount of lump burning, but burning hotter than you are now.  In other words, less charcoal burning, but burning hotter.  I'm not sure how to tell you to do this in you Assassin, but maybe some firebricks to make a "snake" to prevent the whole basket from starting.

(I just remembered the Assassin is gravity feed.  I'm not sure how to do it, but the volume of burning charcoal should be reduced.)
