I'll usually let it sit on the counter for 15-30 minutes before pulling unless I'm hungry. If it gets done early, I'll pop it in a dry cooler wrapped in old towels until serving time. I've always wrapped mine but I think you're good either way. However, unwrapped will take longer. The only really important thing is just letting it smoke until it's done.
I let mine rest, usually for 2-3 hours. No real need but it sure is hot pulling it when you take it right off the smoker.
Wrap or not to wrap. Them's almost fight'n words.
Wrap if you don't mind a soft bark and want to save time.
Don't wrap if time isn't an issue and you like a crispy, hard bark. It adds great texture and contrast to otherwise tender meat. The bark on the leftovers will be softer, but there's still a difference.
