I have a ~7# shoulder already on the smoker plus 2 racks of spareribs ready to go in a couple hours.

We're having our big dinner today. Tomorrow's hot dogs and pulled pork (not necessarily in that order).

Also have 2 3# slabs of bacon curing for the end of the week. I used about a third of the belly to make chicharrones yesterday. Haven't had them since my last visit to the Rio Grande Valley of South Texas and they sure hit the spot!

Here's a little update....
First time trying a rack in the rack my wife got for me. I did one in it and the other the regular way

Shoulder's looking good. This time I took the skin off. Cooking much faster and no stall!


We got this 2-pack of ribs at Restaurant Depot. I couldn't believe how much extra meat was on them.


Once this last round of smoke is done I'm going to foil the ribs. Not so much worried about the shoulder. It's at 160° after 7.5 hours. I think it'll be OK as is.
