The side opposite the firebox.
The firebox side of the plate is the hottest if your juices gather there you will create a grease fire.
 
I would go a 1/2" minimum.

Lang 60 that I got a call on at 3:00 A.M. One morning asking how to salvage his pork butts. The nose was up and the grease traveled to the firebox side.

I will put a serious slip on it.

How much room should I put between the drip pan and the cooking surface?
 
Well, I didn't have enough room for a 3" slope. 1.5" was all I did.

I am concerned I might not have enough opening for the heat to flow good enough at the turn. What do y'all think?
 
I have helped guys through this Mad Dog. You can add an extended wall built from plate on that end to give you the needed opening.
 
MDG, afternoon....    We have a solution for too much heat on the RF plate.....   A "heat shield".....

A plate suspended about 1/4" below the RF plate will keep the RF plate cooler...   It needs an air gap around the edges to allow for air flow... 

If you have an upper air inlet in your FB, having it open will also add cool air and remove excess heat from the FB...   It makes for a good balance of heat and air flow...  reduces fuel consumption...  evens out heat inside the CC.....  It can be extended fully into the FB to reduce heat loss through the top of the FB also for improved fuel consumption...  Many members have installed the heat shield with good results...
