I live in Orlando and have always wanted to be able to do a decent rack of ribs. After 2 weeks of dingling with the new toy, yesterday I threw $30 of Costco ribs on the thing for 5 hours...........dry rub on all 3 racks....added 2 different sauces after 3 hours and left the 3rd with rub only wrapped in foil for 2 more hours.. All were incredible. I have arrived at smoke Heaven.
Have also done 2 two inch ribeyes and the combination of smoker and propane searbox and internal meat temperature probe have turned me into meat professional overnight.
I look forward to learning about rub recipes.
It also turned out the best roasted/smoked whole chicken ever. I will try not to gain 20 pounds while I experiment.
