So our prime rib in the grocery stores here can be pretty small, most would look at it as a big steak, so that's exactly how it was treated. A friend recently did this and I had to try for myself, since our steaks are also too small.
Used my kettle with the slow n sear. This combo hasn't let me down yet. I usually use it for quicker cooks like this instead of my wsm, as it doesn't need as much fuel and heats up faster.
I used a coffee rub and cherry wood, never used either on beef before, so I thought I'd try. Wind was blowing hard so I couldn't get the kettle past 240, so I went with that. Took about an hour to get internal temp to 115, then took it off and seared in a pan with butter, thyme and garlic until I hit 125.
Verdict: the rub was good and made a real nice bark. But for prime rib I don't think I'll stray away from the basic salt and pepper again. Cherry wood was nice too, my wife doesn't like a strong smoke flavor, so we were both happy with it. Big enough for two, but I could have done this one in myself, but I'll definitely keep buying these prime rib (steak) , instead of the steaks( jerky slices) from now on.
