I have a pool party next weekend and I was planning on smoking a few racks of ribs. The problem is the party is at noon on Saturday and I would have to get up at the ass crack of dawn to start smoking. My question is, can I smoke the night before and finish them on the day of the party? Thank you for any input
 
in short answer yes.  if you doing 3-2-1 or 2-2-1 ribs the way i like to do it is shorten the foil step just a tiny bit (20-30 minutes) if you foil or short the cook time same amount. and then let rest outside of the heat 30 minutes and store in the fridge over night. then 30 minutes before they are served throw in a 275-300 degree oven with some sauce brushed on and let that sauce set and serve hot. shorten that to 10 minutes or so on a hot grill (~400 degrees). the sauce will burn/blacken on a hot grill or hot oven depending on whats in it. tastes fine but looks kinda black. if you go with honey sauce try a 215 degree oven/smoker for 45 minutes. honey burns really easily.
