I do not have that feature on mine but The Smoker builder utilizes this to trim the R/F opening he say's it works I have never sen the need for it. Your idea to close off is a viable option On my Hybrid cooker "Bahama Mama" I use locking tuning plates and three exhausts. I can shift the plates to reverse flow or tuning plates and shift the plates to open the firebox end and just serve my warmer.

I hope u dnt mind but i have a ton of questions since this is my first build..

I dont have a real plan kinda just designing as i go ..

What is a good hinge for the door?

How do i determine the exhaust pipe dimension that would work best?

I am adding a 2" grease bridge in the drawing.

So you would have a 2" Dam then the 10" opening and a 3" gap between the plate and the top of your cooking grate. I can draw out your current figuration if you like. :)

I like the wheel that would be cool. I have some old steel wheel handles that came out of a plant they were used for window chains they have handles on them. Never found a use for them they just hang out in my shop lol.

I am two for two on mess ups I apologize. I had figured the 2" dam in your football and added it again to your height. Here is an end view that may help. You actually have 5" to play with. Again I apologize.

A lot of folks do not utilize it Chris. I started using them back in '05 because I saw the need to help prevent the grease from entering the firebox. Now on a reverse flow with a welded in plate the chances do slim down but I have seen them shoot flames out of the turn around before. So I look at it as not a matter of if but when.
I wouldn't classify it as critical but just an added safety measure.

Any thoughts on what size pipe i should use for the exaust?

I have alot of access to pipe im a pipe fitter by trade so not sure if i should should use like 3" or jump to 6" or 8"

Chris,

If the smoker is designed correctly you shouldn't need a fan, just leave it naturally aspirated.

Just extra time and expense .

Spend the money on a digital probe thermometer if you want good Q.

In my opinion I would save those for another project Chris. If those aren't dead nut straight they tend to bend and seize over time.
