Hi all, got a question after having been lurking for awhile getting ideas for my first UDS build.  I like the idea of built-in versatility using the shelving mounting strips inside the drum to be able to adjust height of the racks, but I'm wondering how often they really get used?  Do you find that you really only use the one or two racks on the same levels all the time?  In the future I plan on smoking pork shoulders, brisket, roasts, wings, ribs, loin, fish, and occasionally a whole turkey.  To you that have the adjustable rack height system, how often do you use it and do you ever wish you had a fixed system?

I have the shelf rack system in mine. Don't use the UDS often anymore. Not many large cooks. I can set racks at 1 inch increments. Or add more racks every inch. That'd be nice for jerky. Every two inches is nice for lots of wings.
 
Thanks everyone for the replies! I'll probably just put a few different rack hangers in. Was planning on doing the shelving setup but wondered how much other people actually changed rack heights. Here's my UDS so far. Sandblasting to come.
