Hello all!

I am getting ready for the upcoming 4th of July celebrations!  We are going to a DAY pool party/ NIGHT BBQ dinner and I have volunteered to bring pulled pork.  I have followed the threads on here, so I think I will be good with the smoking part, but my dilemma is what to do with the pork during the day?

I plan on getting up at midnight-1am (depending on how big my pork butt is...purchase tbd) so that it will be done in the morning.  After I pull it off, I will wrap the foiled meat in a couple of towels and stick in a cooler and head to the party.  So lets assume this is 10am... I read that you want this to be wrapped tightly for at least an hour before you pull it....but what if I have about 8 hours of grace time before dinner?  Should I leave this in the cooler for that long, or stick it in a fridge and then re-heat closer to dinner?

Please let me know your tricks!

Well first off, if I haven't before, welcome to SMF!

Your 8 hour timing for the butt may be on the short side.  Id start it at least 12 hours in advance.  As for holding it until it's time to eat.  Wrap it in foil and then put it into an oven at 150 and hold it until you're ready to shred and  eat.  

If you need to shred it before holding, shred it up, put the meat into a 1/2 pan, add a LITTLE juice of choice, cover with foil, and then hold in a 150 degree oven until ready.
 
I guess I should have said, I have 8 hours grace from the time that I anticipate being done, until the time we will eat.  I was allowing myself 10 hours or so to cook this, but I will add a couple more in just to be safe.  Thanks for the advice!! 
 
It sounds like a good plan, but my oven & I think most of the new ovens will only go down to 170, which is just as good for keeping the butt warm.
