I meant to ask, Can someone tell me why my ribs turned out so pink on the inside? I did rub them the night before and let me sit in the fridge. They were cooked all the way and were tender as could be. is it from the smoke or the rub?
 
I guess it could be a deep smoke ring from the rub. 

If they were "enhanced" ribs, that can turn the meat pink.  Ribs from Hormel and Smithfield are enhanced, for example. 

Pork can also come in several colors.  White is preferred by sellers, but you can also get brown, red, and pink.  Might just be the animal. 

As long as they tasted fine, you're good. 
 
I Think they were Smithfield. And there wasn't a single bone with meat left on it, Everyone loved them!

Those are some gorgeous bones!  Smithfield is a very popular previously frozen brand in my neck of the woods, and something about them just puts me off, but I really have to hunt to find alternatives.  Just my personal taste though, like I said, they look like a tasty gnaw!
