Hello everyone.  I am fairly new to the smoking process but looking forward to meeting everyone and learning about smoking from everyone. I am a proud Grandfather of 8 and happily married to someone who is willing to eat anything I try to smoke. We live in Kirkfield, Ontario and really enjoy our country living, and we are surrounded by all kinds of wild game.  I've owned my smoker (Masterbuilt - electric) for a few years but have been reluctant to use it due to some of the horror stories I have heard about. I did actually try it today and made some fairly nice ribs for dinner. A little too much cayenne pepper in the dry rub and they turned out just a little dry to my wife's liking. She likes the meat to fall off the bone but I prefer to have to bite it off. lol  Thanks again for adding me to you your group.
 
Papajohn1, welcome to SMF!  Glad you are here and putting that MES to work.  You're like me and my wife is like yours.  I've learned how to find that sweet spot halfway in between to satisfy us both, but it took practice.  Or I smoke two racks; one for her and one for me.
