Did two butts today. They were both a little over 7 lbs. It looked like one would finish way before the other, but they ended up syncing up and I just took them off.  However, when I did they literally fell apart on the grate. I got all of the meat off, but it came apart in large chunks and some of the bottom was stuck to the grate. What was my mistake? Did I cook too hot? The smoker was in the high 200's. Is there anything else that could have caused this?

That's pulled pork. It pulls easily, be it on the grates or in a pan.

  My butts fall apart taking them off the grates.  I've got insulated rubber gloves so i can cradle the butt like a newborn to its resting place.

They weren't mushy, they were awesome. Used JJ's finishing sauce and got 100% compliments. Good idea on the gloves. I've never had them fall apart like this. Guess I did something right today. Here they are just before getting pulled

 
 
What was the finishing IT of the meat? Sometimes 2 or 3 degrees can make all the difference.

As long as the meat wasn't mushy, it's all good.
203 on both. Best PP I have made yet and there was a bunch so I won't have to do it again for a while, but I might make more just for the fun of it.
