I am from Canada.
please is there anyone that could help me?
my name Germain Rioux.
I did buy a big stainless steel proofer oven , 7' tall, 20 shelves , I made a smoker with the unit.
I would like to know how to wet brine a pork shoulder and bacon slab
and dry brine pork shoulder and bacon slab.
How much time brining and smoking.
I am good at fish smoking but never did smoke big shoulder or bacon slab.
I live in Qualicum Beach British Colombia canada.
