Smoking my first pork shoulder tomorrow.im planning on 225 and allowing 1.5 hours per pound, I will be away from it for the first 5 hours.my question is will the pork dry out without me being there to spray a little apple juice on it? I'm using a pellet smoker.
 
How big is the shoulder?  If it's more then 5 lbs, you're good to go for 5 hrs, as long as you know your smoker temps are stable.  Good luck!

The shoulder is just under 7 lbs. Have to go into work for a few hours hoping I can get it started before I leave will be back in about 5 hours.
 
If your sure your smoker will hold 225 for 5 hours, then no problem.

What smoker do you have & what is your source of smoke?
