I have a buddy with a birthday tomorrow and he & his wife asked if I would smoke all the meats for the party. I am extremely flattered that they asked because it shows me my Q is getting better but I'm also pretty nervous because I've never smoked for someone else before and I want to make sure I don't mess it up lol.
I've got about 27# of pulled pork, 36# of wings and two turkey breasts to do. My plan is to smoke the pork today and warm it up at the party, I've got the wings in some hot sauce and buttermilk and I plan to cook those and the turkey at the party.

Question: I normally soak the wings overnight and then sit them on a rack in the fridge for a few hours to dry them out a bit but I don't have the fridge space for all these so does anybody have any suggestions? I really want to make sure I don't mess this up lol. Thanks in advance.

Wow, that looks great, good luck! Can't wait to hear how it turns out.

Do you have a cooler big enough to put the wings in? Otherwise, I just marinate mine and throw them in the smoker without drying them out, and people still eat them. :)
 
You said you are going to cook those wings and the turkey at the party. How? On a grill or a smoker? When I have done that volume of wings for a party before I smoked them ahead of time first, and put them in foil pans and into the fridge, then warmed/crisped them up on a grill before serving. They were a hit and turned out excellent!

I've got two propane smokers that I'll bring tomorrow so I'll be doing the wings and turkey the day of. I've done wings the day before and they've come out great, I just like to stand around the smoker lol.

Tell you what ... you got some good eating ahead of you, if there are leftover...looks like some nice bark as well ... look up Brunswick stew ... points btw

Thank you buddy, it's greatly appreciated. This is the first time I've had the time to just let them roll and not foil so I'm really pleased with the bark. Thanks again.

  That is some tasty looking pork!  Great color and bark.  Those wings should be awesome too, no need to dry them in the fridge.  Good luck!

Thanks Mike. All are off and letting them cool, I'll post more pics when I pull it.
 
Day two begins. I decided to just do everything here and then take it all to the party. First load of wings is in, after these come out I'll put in the two turkey breasts and the last of the wings.
 
Wings starting to come off. The turkey breasts have been in for about 45 mins.
I plan on warming up the PP in the oven at 275, should I get it to room temp before going in the oven or does it not matter?
