I have a buddy with a birthday tomorrow and he & his wife asked if I would smoke all the meats for the party. I am extremely flattered that they asked because it shows me my Q is getting better but I'm also pretty nervous because I've never smoked for someone else before and I want to make sure I don't mess it up lol.
I've got about 27# of pulled pork, 36# of wings and two turkey breasts to do. My plan is to smoke the pork today and warm it up at the party, I've got the wings in some hot sauce and buttermilk and I plan to cook those and the turkey at the party.
Question: I normally soak the wings overnight and then sit them on a rack in the fridge for a few hours to dry them out a bit but I don't have the fridge space for all these so does anybody have any suggestions? I really want to make sure I don't mess this up lol. Thanks in advance.
