New to posting on these forums, although I have been reading them for awhile now. My Wife bought be a new Dyna-Glo Offset charcoal smoker for fathers day to replace a propane smoker I had a few years ago. These forums have helped me so much with the learning curve of going from propane to charcoal. I hope that as I learn more I will be able to contribute to others as they have to me. I'm still working on the mods for my smoker, She gulps air from all over the place but I'm getting closer. I couldn't resist a fathers day rack of pork ribs tho, so I let her rip!


We also Smoked some stuffed Portabella Mushrooms and Bacon Wrapped Jalapeno Poppers. The mushrooms were fantastic, the filling is a mixture of Cream Cheese, Bacon, Garlic, and Jalapenos all mixed together in a food processor then stuffed into the mushrooms.


I love to tinker with things and make them my own, So I figured why not give the new smoker a customer paint job! I still have a few more coats to do, it's a long process since I fire the smoker for a few hours between coats of paint to make sure It cures well. Hopefully, I have the mods complete on the firebox by next week, I'm dying to try a longer cook, I picked up a few Pork butts and a Brisket, but the temps are still all over the place until I get it sealed up.

Thanks, Ray! I can't wait to be able to try some of the longer cooks and share results with everyone. So much to learn and so many things to explore!
 
Thanks for the warm welcome guys!! I have 3 more racks going in this weekend. Hope they turn out as good as the first ones did!
