So I'm just getting into smoking. Just set it up tonight and seasoning it right now. Question is can anyone help me out with temp and times for chicken legs. Also I thought poultry was 165 but the package of legs said cook to 180. I'm doing a cornell chicken 24 hour soak with a mix of hickory and apple.
 
165 is done as per USDA.  I like mine 170-175.  Better texture.

What smoker you using?
 
Idk the name of it. It's just an electric smoker. Highest it's temp has hit while seasoning with no meat or chips was 350 F. It's nothing special cheaper one just to get into the art of smoking meats
 
Well I found it. It's call a masterbuilt sportsman elite. Anther issue is the fact it has no chip loading capabilities. Just a tray inside the smoker
