Mongo here, just getting started on this site and hope to get comfortable playing with my new electric smoker.  Just got the Masterbuilt 30" 20070910.  Tried back ribs and sausage for the first attempt today and the ribs came out a bit overdone.  Had a thermometer in the sausage and that came out perfect!  Tried the 3-2-1 and see that the 2-2-1 would have probably worked better. 

I have a question about the temp control on this unit.  What I experienced is a fairly large swing in the temp.  I had it set at 225 and it never settled anywhere there.  The temp swung from up to 238 then down to 216  Water was full, meat temp was stable and vent was about 1/2 open. Mild breeze and hot outside.  Does this sound reasonable?  I just switched from a charcoal smoker because of the same issue.  Didn't want to spend all day standing over the smoker...  Any suggestions?

Your smoker cycles on & off just like an oven, so there will be temp swings.

Thanks for the feedback SmokinAl and Submariner.  While waiting for a reply, I called the company and told them my story, they are sending another temp controller right out. I will have it in time for next weekend and another smoke! Apparently they have had many calls on the controller and didn't argue one bit.  If this one swings that much I will let it be.. Thanks again!
