I know there's quite a few threads here on smoking eggs, etc..  I've googled til my eyes bled, on which is possibly better method..

Smoker @ 225F

A.  Smoke unboiled eggs for 1hr, then crack shells (don't peel) smoke for additional 45-60min, dunk in ice water to 'shrink' the egg from sticking to shell.

B.  Smoke boiled eggs for 30 min. with cracked shells

C.  Smoke boiled eggs for 1hr with uncracked shells

D.  Smoke boiled/shelled eggs for 30-45 mins under moderate/heavy smoke @ 180-200F

I've only tried the boiled/shelled method (roughly) for about 30-45.  They tanned/browned nicely, but the outer 1/16th" of egg 'skin' was quite rubbery, even with a water pan in the smoke box.

How do you guys smoke eggs?  I really loved the flavor I got, but the rubbery texture of the smoked skin (made deviled eggs out of 'em) was off-putting a little..

Thanks!

Myself.. I'm one of the COLD SMOKERS ... I hardboil first... peel.. cut in half (for deviled eggs) ... put them in the smoker and use my pellet tray with sawdust (less heat) for 3-4 hours ... never had any luck cooking them in the smoker... smoke wasn't going through the shell enough for us ...

X2. Boil, peel, cold smoke. I only smoke mine for 45 min with hickory, maybe a hr with maple.

Hahahahaha your kidding right? Oh my you tried to smoke eggs uncooked still in the shell? My gut is hurting from laughing sorry but that right there is funny!

Boil and peel eggs as normal. You can do these in a weber grill or an old refrigerator smoker nothing fancy is needed. But DON'T use heat to fire wood chips. Use a cold smoke method I use the A-maze-n smoke tube. Smoke with apple or cherry pellets for 2 to 3 hours for the best egg salad you have ever had or use them in batch of home made pickled eggs.

Nope, I didn't say "I" tried smoking them raw.. :P

And I've made a cold-smoker, as well as use the Amazen tube (and maze).

So I didn't "cold smoke" them, which is what I'm seeing to be the thing to do..

I'll try that, then..

Thanks for all of your inputs!

I did a dozen smoked deviled for Thanksgiving dinner. They turned out perfect! Always got to put some paprika and some Maldon salt in there with the eggs while you are at it!
