Ribeyes and mussles with a seafood mixture

Will be grilling 2 nice rib eyes and saute up some mussels and a seafood mixture ( has shrimp, crab, calamari, and octopus too )  with garlic and plum tomatoes, tomato paste, some white wine  as well ...My rib eye with spog and Montreal, 1 with sp only, ( wife's steak) also sh likes well done ... lol .... mine will be med rare, like 4 minutes a side ...

wont grill up till around 6 o'clock or so don't know how it all will turn out, the steaks will be good I'm sure, but first time for the seafood mix ... i have made mussels alot, but not the whole new recipe ...
 
getting stuff ready, we are getting some storms coming  in ..gotta get some stuff together .. we are good under our outdoor enclosure.
 
3 roma tomatoes sliced up, 1 / 2 can of tomato paste, 1/2 can tomato sauce, 2 tablespoons of minced garlic, salt and pepper .... just turned to 350 in electric skillet ... probably cook this way for like 20 minutes, then turn down to simmer.   charcoal is just lightin up good, will put steaks on like in 15 minutes or so ,,,,
 
Looks good. Try adding some fresh Basil or Tarragon. The light Anise flavor enhances the seafood, classic French technique. I love Squid but can be tricky. I was taught to get it tender you have to cook it 30 Seconds or an Hour. Anything else and you got rubber bands...JJ

all looks fantastic nothing better then surf and turf !

one thing though be careful with mechanically tenderising your steaks like that. the needles can take bacteria like e coli  into the middle of the meat  rather then just on the surface and if you cook the meat  under 165 degrees internal which would be well done   like to medium   155-160  where its still pink inside  , it can be harder to kill and could make you very sick
