Hey all, so I have an MES40 with four racks. Two full racks of baby back ribs fit on each rack in the MES. I'm looking to cook 6 racks of ribs at once.

So I've had great success with 2 racks of ribs at once using the 2-2-1 method at 225 degrees and my amnps burning both ends at the same time for the first 2 hours. Any advice on how to do 6 at once? I'm wondering what temp and time adjustments I might need to make as well as how to best arrange the meat on the MES racks. Thanks for any advice!
 
The 2-2-1 method @ 225 is a good rule of thumb to stick by but my concern would be loading the MES to its max. The lower racks would probably cook fastest while the top rack may not cook up as much due to the other racks blocking the heat flow. Back when I had my MES, I would rotate the racks in the MES once or twice to ensure everything gets cooked evenly. It might take you longer than 5 hours because of this.
