New to smoking but am loving it

Morning all

I had purchased a Traeger Tailgater and got some good meat off of it until I realized that the temps would just go from low to high and it kept cycling that way for the 2 hours I watched it, I have heard now from 5 different Traeger tech support people and they ALL have given me different ways they say will fix the problem, well nothing did so I returned it to ACE, I recently purchased a Pit Boss 700FB and after playing with it last night I have it figured out, I think the smoke temp is a little high (180) but it does not move off of the 180 and I get a good amount of smoke every 2.5 mins, I have done Tri-Tips, Brisket and what I would have to say is the best smoked chicken I have ever tasted, it was so tender like cutting butter and the smoke smell when I warmed it up in the microwave was like smoking it all over again, anyways I am from Colorado and look forward to learning more about smoking on this site

Naval Aviator huh?? what did you fly?? I was a Crew Chief on CH-53, A-D and E's, got about 1200 hours and maybe 40 hours stick time when the HAC got bored with a Hop, and yes it was nice seeing the new smoker doing what it said it was supposed to do, too bad I am the only one at home that eats anything,

I'm starting to stock my friends freezers just so I can smoke more

Todd, no one calls themselves a BDJH unless they earned it the hard way.  Thank you for your service, my friend!

Fleet aircraft was the A-7E Corsair II.  Westpac.  Kitty Hawk (half cruise) and Enterprise (one cruise, two workups).  2149 hours (800-something in the Corsair), 281 traps, 79 at night.  The rest was training command (student and instructor in T-2C and TA-4J) and recruiting (T-34B).  Now all my airframes are either on a stick or scrap, goes for the carriers too, except the stick part.

Got bored flying, resigned, then after too many years in the corporate world chose to pursue a career as a novelist when I got laid off.  We'll see how that works out.  In the meantime, I keep my smoker busy.  Making beef jerky at this exact moment.         

Lots of vets here, Todd, so you're in good company.  I'm looking forward to seeing you around the forum.

good luck with the writing, so Beef Jerky sounds like a great way to spend a Saturday, any tips or tricks, had not thought of that before, you just slice something really thin, marinade it and smoke? by the way I have always loved the BDJH, first time I thought of it I laughed but that was a very long time ago, it works great for an e-mail address as well something that is never forgotten and some people will say well isn't that degrading and I say F no it has the word Jarhead in it so I am in
