Well, I spatchcocked the turkey, trimmed up neatly, on underside sprayed w/olive oil, and spog, and on top, spayed w/ olive oil and rubbed with new recipe  
[h3]Maple Barbecue Rub[/h3]
This rub works on pork, chicken, beef and fish.

From Coombs Family Farms
  • 5 tablespoons maple sugar
  • 2 tablespoons kosher salt
  • 2 tablespoons paprika
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon ground black pepper
  • 1 tablespoon onion powder
  • 1 1/2 teaspoons cayenne pepper
  • 1 1/2 teaspoons celery salt
  • 1 teaspoon oregano
Combine all ingredients in a bowl. Mix well. Store in an airtight container.

bird is all rubbed, back in fridge, will fire up smoker around noon ... will smoke with hickory, around 230 degrees, looking for an internal of 165 - 170 ......

Some more QVIEW ... wife made a small pan of stuffing, and some deviled eggs ... had to try both.   and , I am sure everyone tries the deviled eggs .

Thanks man, also I think I will fire up the grill and make some califlower steaks ... what I do is , cut califlower 1/2 inch thick slices, and sprinkle both sides in olive oil, put in bag and let set for about 2 hrs, then spg on both sides, start grilling at around 300, on foil, for like 15 minutes a side, then, I have a few roasted red peppers in fridge, ( I do periodically ) slice em, and add on top, then cover with cheese, and melt down till you like it ... pics later  ... btw chili, guess we ok, blame it on me ok ???? rum and cokes, and 2 days off this weekend ....have to work next sat. ,... of course

here is the cauliflower ... damn, a little too early, but is all done.. grilled on the charcoal grill......


i will keep it warm .... 140 in the breast, 155 in the thigh 
 
Tell you what ... i tried the cauliflower  , it it really good ... I cant imagine any left over today

Thanks man, the rub was pretty good, also what i like about spatchcocking turkeys or chicken is you get the smoke ( pink ) from underside as well .....
