Coconut shavings as rub? Anyone with experience?

So here is the question, I have a 2 pound boneless beef short rib, which I normally simmer in coconut milk for a recipe. We recently acquired a smoker and wanted to smoke it covered in coconut shavings. However I can't seem to find any form of rub or information about coconut shavings as a rub for smoking.

Does anyone here have any experience with coconut shavings as a rub? Or maybe with smoking coconut, since I have no idea what would happen to the shavings when exposed to heat for a long time.
