So, my wife picked up two smaller cuts of pork shoulder from Costco, about 9 pounds between the two. And in my prep, I cut the butcher's twine. Well, the thing unfurled. I don't know what those butchers were up to, but the thing was almost coiled up. I'm intending to do pulled pork with it, but I'm wondering how it'll go. Would you tie it back up so it's got some shape?

Needless to say, I'm not sure I'm going to be getting larger cuts from Costco again. I've never had an issue like this with a butcher. Hopefully I can save this.

Just to play the Devil's advocate...I frequently cut my Butts into fist sized pieces, 1.5 to 2 pound each. I smoke 3 hours at 225-250 then foil until IT hits 205, about another hour or so. Saves a bunch of time and the added surface area makes for add flavor...JJ
